At the end of fermentation, the new wine is sent to an artisanal sparkling winemaker from Veneto who proceeds to process it in an autoclave (Charmat method) aiming for an "extra dry" sparkling wine with a fine and persistent perlage.

Harvest : towards the end of August

Color : straw yellow

Bouquet : elegant, with hints of wildflowers

Taste : delicate and slightly aromatic

Serving temperature :  6-8 °

Food and wine pairing : ideal as an aperitif, due to the low sugar content it can however accompany a complete fish-based meal, from appetizers to first courses and even grilled
